The Best Coffee Cake Recipe

This is the ultimate coffee cake recipe. It’s so tender and fluffy it almost melts in your mouth. The brown sugar topping melts into the cake while baking, giving it an amazing taste while making it even more moist. Pure decadence. If you want to impress somebody, or if you have special guests for dessert or breakfast and you have trouble deciding what to make, problem solved with this easy (but insanely delicious!) cake. What's better than the smell of warm, delicious coffee cake to wake everybody up in the morning? Try this tender, moist cake. It's sure to impress!
Serves: 15
  • For the cake:
  • 3 cups all purpose flour ( I sub one cup for whole wheat)
  • 1 cup granulated sugar
  • ¾ tsp salt
  • 1½ tsp baking soda
  • 1½ tsp baking powder
  • 1½ tsp cinnamon
  • ⅜ cup orange juice
  • 1½ eggs
  • 1½ cups milk
  • ¾ cup vegetable oil
  • For the brown sugar topping:
  • 1 cup brown sugar
  • ½ cup butter
  • 1 cup walnuts or pecans (optional)
  • For the glaze:
  • 1⅛ cups powdered sugar
  • 1½ tablespoons milk
  • ¾ tsp vanilla extract
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk together flour, sugar, salt, baking soda, baking powder, and cinnamon.
  3. In a medium bowl, combine orange juice, eggs, milk, and oil.
  4. Add the wet ingredients to the dry and stir/fold just until combined. Don't over mix.
  5. Pour into a greased 9x13 glass baking dish.
  6. For the topping combine brown sugar, butter, and nuts (optional) and dollop evenly over your cake batter.
  7. Pop the cake in the oven and bake for approx. 30-35 min. until beautifully golden brown and a toothpick inserted in the center comes out clean and not too much raw batter comes out of the brown sugar swirl. Let cool a bit before drizzling on the glaze.
  8. For the glaze simply whisk together the powdered sugar, milk, and vanilla.

    Just a note of caution, if you want a clean oven, DO NOT put the batter in a pan that is smaller then 9×13… Otherwise the sugar mixture will bubble over the sides. The cake is deliciously moist! And a sprinkle of orange zest added to the icing also adds the great flavour. Perfect!
