Pumpkin Cream Cheese Frosting

Frosting.

 

It can do wonders to a cupcake. But at the same time, it has a tendency to be really ‘meh’ and end up in the corner of birthday plates. In my opinion, it’s something to be particular over, because it can make or break a cupcake.

Perfect frosting shouldn’t be overly sweet, and should be fluffy and hold its shape well, as well as have a creamy, distinguishable flavor. 

 

Frosting is a beautiful thing when it’s done right.

I came up with this pumpkin cream cheese frosting a few years ago while mixing and matching ingredients with cream cheese. As a result of my ingredient adding brain-wave, this flavorful, spiced frosting was born (beginner’s luck?) It’s been one of my favorite frostings ever since, for very good reason. I will go as far as saying you will never look the same at pumpkin cupcakes again after trying it. 

Pumpkin Spice Cream Cheese Frosting

This frosting is creamy, fluffy, and bursting with vanilla & pumpkin spice flavor.
Servings 4 cups frosting (approx)

Ingredients

  • 1 block cream cheese very very soft
  • 1/2 cup + 1/4 cup powdered sugar
  • 2 cups heavy cream
  • 1/3 cup powdered vanilla pudding
  • good pinch salt
  • 1/3 cup + 2 Tbsp pumpkin puree
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  • Beat extra soft cream cheese with powdered sugar until perfectly smooth and creamy, scraping down the bowl as needed to get rid of any lumps.
  • Add heavy cream, vanilla pudding, pumpkin puree, salt, and spices and beat until fluffy.

Notes

This recipe frosts 24 cupcakes with a good amount leftover.
A 102 g box vanilla pudding  = 2/3 cup
