Cheesy Zucchini Pinwheels

Isn’t it fun heading to the garden and searching for zucchini in those big, thriving plants? And once you’ve proudly retrieved them, it’s time to decide how to use them. To help you with that, I’m introducing you to a side dish that definitely a classic ’round here and that’s also

-HEALTHY

-DELICIOUS

-EASY

We added fresh basil on top and it was seriously so, so good with those juicy, flavorful vegetables. We tried drizzling the top with balsamic vinegar but decided that it wasn’t the greatest. It was just too sour…However, if you have an actual balsamic glaze on hand, feel free to try that and please let me know how it was:) Not only are these pinwheels perfect for an everyday meal, their catchy, vibrant colors and summery taste make them a fabulous addition for a guest meal.

Cheesy Zucchini Pinwheels

These pinwheels are sure to become a summer staple with their juicy veggies, melty cheese, and fresh basil.
Servings 33 pinwheels (approx.)

Ingredients

  • 1 medium zucchini
  • 1-2 medium onions
  • 3-4 medium fresh tomatoes
  • Good 1 1/2 cups shredded mozzarella/chedder cheese

salt & pepper

    olive oil

      fresh basil

        Instructions

        • Preheat oven to 375 degrees F and line a baking sheet with parchment paper. (I also had to line another smaller dish)
        • Slice zucchini into 1/4 in thick slices and arrange on baking pans. Drizzle with olive oil and sprinkle with salt & pepper.
        • Slice the onions into paper thin rings and arrange them in one even layer on each zucchini slice.
        • Slice fresh tomatoes 1/4 in thick and layer one slice on top of the onions. Season well with salt and pepper. Bake in preheated oven for 25-30 min or until tender.
        • Divide/sprinkle the cheese evenly on top of the pinwheels and broil for 4-6 min until golden brown. Mmmmm.......
        • Garnish each pinwheel with fresh basil, and you can also try chopped bacon!
