These pinwheels are sure to become a summer staple with their juicy veggies, melty cheese, and fresh basil.

Ingredients
1mediumzucchini
1-2mediumonions
3-4mediumfresh tomatoes
Good 1 1/2 cupsshredded mozzarella/chedder cheese
salt & pepper
olive oil
fresh basil
Instructions
Preheat oven to 375 degrees F and line a baking sheet with parchment paper. (I also had to line another smaller dish)
Slice zucchini into 1/4 in thick slices and arrange on baking pans. Drizzle with olive oil and sprinkle with salt & pepper.
Slice the onions into paper thin rings and arrange them in one even layer on each zucchini slice.
Slice fresh tomatoes 1/4 in thick and layer one slice on top of the onions. Season well with salt and pepper. Bake in preheated oven for 25-30 min or until tender.
Divide/sprinkle the cheese evenly on top of the pinwheels and broil for 4-6 min until golden brown. Mmmmm.......
Garnish each pinwheel with fresh basil, and you can also try chopped bacon!
