Fresh Salsa

And just like that, summer’s at a close, and fall is just around the corner. Cooler nights, sharper air, and harvest are all here to remind us of the close of another season. I’m worrying a bit that this post is a little late, as this blog has been slightly neglected this summer. But I’m presenting it to you anyway, while hoping that you haven’t canned all your tomatoes yet to sqeeze in this fresh salsa. Bursting with bright, punchy flavors, it’s guaranteed to become one of your favorite summer appetizers. My dad thinks it’s the best thing ever. But then again, who doesn’t like cilantro and lime? This salsa is perfect for a quick lunch, or for an amazing appetizer to give summer a last hurrah. 

Fresh Salsa Recipe

This salsa recipe has fresh, bright, amazing flavors and is sure to become one of your favorite summertime appetizers.

Ingredients

  • 2 medium tomatoes
  • 1 green bell pepper
  • 1/4 cup diced onion
  • 1/3 cup chopped cilantro
  • Juice from 2 limes
  • 1/2-1 tsp salt add to taste
  • 2 tsp sugar
  • 1/2-1 avocado diced (optional)

Instructions

  • In a medium bowl, gently stir together tomatoes, green pepper, onion, cilantro, salt, and sugar. Squeeze limes over everything. Taste and adjust. Add diced avocado on top, if desired, and lightly salt. Serve with tortilla chips.

Notes

I usually have to spoon liquid off from the salsa. If you find the liquid really annoying, you can try draining the chopped tomatoes before mixing them with the other ingredients.
