Creamy Earl Grey Bubble Tea

Ingredients

Tea:

  • 2 qts water
  • 1 cup good quality Earl Grey loose leaf tea*
  • 3/4 cup honey*
  • 1 Tbsp vanilla extract

Bobas

    Ice

      Heavy Cream

        Almond Milk

          Milk

            Instructions

            • Bring 2 qts (8 cups) water to a boil. Remove from heat and add 1 cup loose leaf tea. Cover with lid and steep for 20 minutes.
            • Strain tea into a large glass jar. Add 1 cup honey and 1 Tbsp vanilla and stir until dissolved. Cover and chill overnight. You can make the concentrate a couple days in advance.

            Bobas:

            • Bring 10 cup of water to a boil. Add 1 cup of bobas and stir gently so they don't stick together. Once bobas float to the surface, cook them for 3 minutes* Then turn heat off and cook 3 more minutes.
            • Strain bobas and immediately add to ice water, stirring gently to loosen bobas and to cool evenly. Strain again, empty into a bowl, and mix with 3 Tbsp granulated sugar or honey.* Stir until syrupy and dissolved.
            • To assemble bubble tea, spoon bobas into a tall glass. Add crushed ice on top, and fill about 2/3 with chilled concentrate. I like to add a pinch of salt because it brings out the flavor. Add a splash of heavy cream, a pour of almond milk (Earth's Own is my favorite) and fill remainder of glass with regular milk. ENJOY.

            Notes

            *I did 1/2 cup Black Tea Earl Grey and 1/2 cup Rooibos Earl Grey.
            *If you don't want to use honey you can try granulated sugar....you just might have to add more since honey is sweeter.
            *6 min makes a quite soft, but still chewy, boba. 4 min makes a firmer boba.
            *Feel free to try brown sugar. It would probably add wonderful flavor.
