Bring 10 cup of water to a boil. Add 1 cup of bobas and stir gently so they don't stick together. Once bobas float to the surface, cook them for 3 minutes* Then turn heat off and cook 3 more minutes.
Strain bobas and immediately add to ice water, stirring gently to loosen bobas and to cool evenly. Strain again, empty into a bowl, and mix with 3 Tbsp granulated sugar or honey.* Stir until syrupy and dissolved.
To assemble bubble tea, spoon bobas into a tall glass. Add crushed ice on top, and fill about 2/3 with chilled concentrate. I like to add a pinch of salt because it brings out the flavor. Add a splash of heavy cream, a pour of almond milk (Earth's Own is my favorite) and fill remainder of glass with regular milk. ENJOY.
