Apple Coffee Cake Recipe with Spiced Walnut Streusel and Vanilla Glaze

This coffee cake is tender and soft, with an amazing, crisp, spiced nut struesel and vanilla glaze.

Ingredients

Cake:

  • 3 cups all-purpose flour (I sub 1 cup whole wheat)
  • 1 cup granulated sugar
  • 3/4 tsp salt
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/8 cup orange juice
  • 2 medium eggs
  • 1 1/2 cups milk
  • 3/4 cup vegetable oil
  • 2 large apples peeled, cored, and diced largely

Streusel:

  • 1 cup brown sugar
  • 1/2 cup softened butter
  • 1 cup walnuts or pecans coarsely chopped
  • 1/3 cup all-purpose fllour
  • 1 1/2 tsp pumpkin spice
  • 1/2 tsp cinnamon

Glaze:

  • 1 1/8 cups powdered sugar
  • 1 1/2 Tbsp milk
  • One splash of vanilla

Instructions

  • Preheat oven to 350 degrees F with rack in the center. Grease a 9x13 in glass baking dish.
  • Peel and core apples and largely dice them. Set aside.
  • In a large bowl, whisk together flour, sugar, salt, baking soda, baking powder, cinnamon, and nutmeg.
  • In a medium bowl, whisk together orange juice, eggs, milk, and vegetable oil. Pour into dry ingredients and fold until streaks of flour remain, then add apples, and continue folding until combined. Don't overmix.
  • In a medium bowl, mix together brown sugar, butter, flour, chopped walnuts, pumpkin spice, and cinnamon until large crumbs form. Sprinkle over batter.
  • Bake the cake for approx. 50 min or until golden brown and a toothpick inserted in the center of the cake (not the brown sugar swirl) comes out with a few moist crumbs. Let cool for a bit before drizzling on the glaze. Enjoy!
  • For the glaze, whisk together powdered sugar, milk, and vanilla until smooth and silky.
