Serves: 15
Ingredients
  • For the cake:
  • 3 cups all purpose flour ( I sub one cup for whole wheat)
  • 1 cup granulated sugar
  • ¾ tsp salt
  • 1½ tsp baking soda
  • 1½ tsp baking powder
  • 1½ tsp cinnamon
  • ⅜ cup orange juice
  • 1½ eggs
  • 1½ cups milk
  • ¾ cup vegetable oil
  • For the brown sugar topping:
  • 1 cup brown sugar
  • ½ cup butter
  • 1 cup walnuts or pecans (optional)
  • For the glaze:
  • 1⅛ cups powdered sugar
  • 1½ tablespoons milk
  • ¾ tsp vanilla extract
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk together flour, sugar, salt, baking soda, baking powder, and cinnamon.
  3. In a medium bowl, combine orange juice, eggs, milk, and oil.
  4. Add the wet ingredients to the dry and stir/fold just until combined. Don't over mix.
  5. Pour into a greased 9x13 glass baking dish.
  6. For the topping combine brown sugar, butter, and nuts (optional) and dollop evenly over your cake batter.
  7. Pop the cake in the oven and bake for approx. 30-35 min. until beautifully golden brown and a toothpick inserted in the center comes out clean and not too much raw batter comes out of the brown sugar swirl. Let cool a bit before drizzling on the glaze.
  8. For the glaze simply whisk together the powdered sugar, milk, and vanilla.

Just a note of caution, if you want a clean oven, DO NOT put the batter in a pan that is smaller then 9Γ—13… Otherwise the sugar mixture will bubble over the sides. The cake is deliciously moist! And a sprinkle of orange zest added to the icing also adds the great flavour. Perfect!

Did you get this recipe from Janet Hofer?

    1. MyWayGourmet at

      No.

  4. serene hofer at

Well, you should ask Janet for her recipe. we’ve tried it before and we loved it. But, i would love to try yours as well. by the way, in the glaze, does the powdered sugar have to be sift first?

    1. MyWayGourmet at

No it doesn’t. πŸ™‚ Give this recipe a try, it’s amazing!

  5. serene hofer at

I think I will thanks! I’ll try to send you a picture of the results. also Janet’s is a little more complicated because you cook up a sauce. instead of a glace.

Hi Denae, I tried out your coffee cake! it was delicious!!!! also putting a few blueberries on top took it to the next level. but there was only one problem, when I made the brown sugar topping it was like a dough.

    1. MyWayGourmet at

Great to hear Serene! That’s ok, it’s ‘doughy’ when I make it tooπŸ™‚ It’s not a struesel, it’s more of a topping that swirls and melts into the cake.

      1. serene loves baking at

ok. at least I know it was suppose to be doughy

How do measure one and a half eggs?

    1. MyWayGourmet at

Just crack the egg into a bowl and take out half of it.

  9. Saadia at

But…where is coffee in this cake ?

    1. MyWayGourmet at

Hi Saadia. Coffee cakes don’t have coffee in them, you enjoy them with coffee. It’s the perfect match to eat with coffee because of the sweet glaze and streusel:)
